Nutritious Vegetable Millets Khichdi Recipe for a Healthy Meal

Millets Khichdi

Ingredients

  • 15 gms Millet (you can choose any 1 millet)

  • 15 gms Moong Dal or Green Moong (preferably sprouted if green moong) 

  • ½ Cup or 1 small bowl of veggies diced (carrot, green peas, french beans

  • ¼ Cup  Bottle gourd diced optional 

  • 2 tablespoons chopped tomatoes

  • ½ teaspoon chopped chillies

  • 2-3 leaf of curry leaves (optional)

  • ½ teaspoon fresh ginger grated

  • 2-3 Cloves (optional)

  • 2-3 black pepper whole (optional)

  • ½ teaspoon mustard & cumin seeds

  • ⅓ teaspoon turmeric powder

  • ½ teaspoon coriander powder

  • 2 tablespoon of A2 Gir Gow Bilona Ghee

  • 1 teaspoon or as per your taste, Himalayan pink salt

  • 1 ½  glass of Water or as per your requirement.

  • Some fresh chopped coriander.

Pre-Preparation

  • Soak Millets & Dal separately for at least 8 hrs.

Method

  • Heat ghee in a mud pot, add cumin & mustard seeds, allow them to crackle.

  • Add ginger, chillies, black pepper, cloves, curry leaves & mix well.

  • Add all vegetables, spices & salt, mix well

  • Then add soaked millets & dal, saute for a min.

  • Mix well & add water.

  • Let it cook on slow flame till it's half cooked then add veggies mix well, close  the lid & let it cook for another 15mins. Serve hot with some curd or green chutney.
